Dhal Curry Recipe Fire Dragon Style

So many of our lovely guests have asked how we make our Fire Dragon Dhal Curry, so we thought we’d jot down the recipe on the website so that you can make it at home!

What Kind of Lentils or Dhal Do We Use And Why Are Lentils So Cool?

Did you know that lentils were the oldest cultivated legume?  There are four main types: Brown, Green, Red & Yellow and Speciality Lentils such as Puy or Black Beluga.

Lentils are used in cooking all over the globe and are a common staple in India and the Indian subcontinent.  What’s more, they are incredibly good or you.  Lentils are high in fibre and protein.  They’re small and tend to cook quickly and, even better, they don’t have to be soaked before you cook them.

One cup of cooked lentils contains around 230 calories, 18 grams of protein, 1 gram of fat, and 16 grams of fiber.

Since they’re packed full of soluble and insoluble fibre, they stablise blood sugar, reduce cholesterol and aid digestion.  Full of complex carbs, your energy burns slowly.  What’s more, one cup of cooked lentils provides 90 percent of the daily recommended intake of folate (vitamin B), which helps the body build new cells and may prevent cancer.  They’re also full of magnesium, which can lift you mood and helps you absorb calcium.  And even better, the iron in these powerful pulses helps move oxygen throughout the body.

We use split RED LENTILS to make our dhal curry.

 

What Equipment Will You Need?

1 x large saucepan

1 x a large chopping board

1 x a few teaspoons

1 x wooden or metal spoon

1 x gas hob

 

Ingredients

Coconut oil
1 x large onion
3 x cloves of garlic
1 x tsp of chopped ginger
1 x sprig of curry leaves
1 x capsicum chilli sliced
2 x chunks of rampa leaf
2 x tsp salt
0.5 tsp of pepper
1 x tomato – chopped
2 x large mugs of dhal
0.5 tsp of turmeric
0.5 tsp of coriander powder
1 x tsp of cumin powder
0.5 tsp of cinnamon powder
2 x tsp of roasted curry powder
0.5 tsp of fenugreek seeds
0.5 tsp of mustard seeds
3 x tsp of unroasted curry powder
2 x green chillies or red chilli flakes to taste
Coconut milk
Limes

Recipe Instructions

  1. Heat the oil in a pan.
  2. Add the onion, garlic, curry leaves, ginger, rampa leaf, mustard seeds, fenugreek, chillis, capsicum chillis and cook for 3mins on a high gas flame until soft.
  3. Add the turmeric, cumin, coriander, cinnamon, curry powders, salt and a little more oil to ensure they don’t burn.
  4. Then add 1 large mug of water and simmer for 2mins.
  5. Then add the dhal, more water to cover it and stir.
  6. Keep stirring on a high heat and keep adding water as the pan gets drier.
  7. Simmer and stir for about 20 mins. Then add another cup of water leave to simmer for another 20 mins on a low heat.
  8. Then add 1 x can of coconut milk or about 250ml (thick).
  9. Mix and add lime.
  10. Add pepper to taste.
  11. Simmer for 3mins and then take off the heat and stand for at least 20 mins before serving.
