Dhal Curry Recipe Fire Dragon Style

So many of our lovely guests have asked how we make our Fire Dragon Dhal Curry, so we thought we’d jot down the recipe on the website so that you can make it at home!

What Kind of Lentils or Dhal Do We Use And Why Are Lentils So Cool?

Did you know that lentils were the oldest cultivated legume?  There are four main types: Brown, Green, Red & Yellow and Speciality Lentils such as Puy or Black Beluga.

Lentils are used in cooking all over the globe and are a common staple in India and the Indian subcontinent.  What’s more, they are incredibly good or you.  Lentils are high in fibre and protein.  They’re small and tend to cook quickly and, even better, they don’t have to be soaked before you cook them.

One cup of cooked lentils contains around 230 calories, 18 grams of protein, 1 gram of fat, and 16 grams of fiber.

Since they’re packed full of soluble and insoluble fibre, they stablise blood sugar, reduce cholesterol and aid digestion.  Full of complex carbs, your energy burns slowly.  What’s more, one cup of cooked lentils provides 90 percent of the daily recommended intake of folate (vitamin B), which helps the body build new cells and may prevent cancer.  They’re also full of magnesium, which can lift you mood and helps you absorb calcium.  And even better, the iron in these powerful pulses helps move oxygen throughout the body.

We use split RED LENTILS to make our dhal curry.

 

What Equipment Will You Need?

1 x large saucepan

1 x a large chopping board

1 x a few teaspoons

1 x wooden or metal spoon

1 x gas hob

 

Ingredients

Coconut oil
1 x large onion
3 x cloves of garlic
1 x tsp of chopped ginger
1 x sprig of curry leaves
1 x capsicum chilli sliced
2 x chunks of rampa leaf
2 x tsp salt
0.5 tsp of pepper
1 x tomato – chopped
2 x large mugs of dhal
0.5 tsp of turmeric
0.5 tsp of coriander powder
1 x tsp of cumin powder
0.5 tsp of cinnamon powder
2 x tsp of roasted curry powder
0.5 tsp of fenugreek seeds
0.5 tsp of mustard seeds
3 x tsp of unroasted curry powder
2 x green chillies or red chilli flakes to taste
Coconut milk
Limes

Recipe Instructions

  1. Heat the oil in a pan.
  2. Add the onion, garlic, curry leaves, ginger, rampa leaf, mustard seeds, fenugreek, chillis, capsicum chillis and cook for 3mins on a high gas flame until soft.
  3. Add the turmeric, cumin, coriander, cinnamon, curry powders, salt and a little more oil to ensure they don’t burn.
  4. Then add 1 large mug of water and simmer for 2mins.
  5. Then add the dhal, more water to cover it and stir.
  6. Keep stirring on a high heat and keep adding water as the pan gets drier.
  7. Simmer and stir for about 20 mins. Then add another cup of water leave to simmer for another 20 mins on a low heat.
  8. Then add 1 x can of coconut milk or about 250ml (thick).
  9. Mix and add lime.
  10. Add pepper to taste.
  11. Simmer for 3mins and then take off the heat and stand for at least 20 mins before serving.

Fixing Flora’s Thyroid Issue With Kinesiology

Kinesi-WHAT?!  Yes, that’s right we are slightly mad … and yet, if you have a four legged member of your family, you’ll want to watch the video below – it’s absolutely wonderful 🙂

Let’s share Flora’s story.

On 23rd September 2017, we picked up Flora from the road and brought her to Fire Dragon Hideaway.  She was in a mess.  She had no fur on her ears or on the underside of her body.  She had a bad case of ticks and fleas: I think we removed about 90 ticks on the first night.  She had a racing heart rate, a high fever, mange and ringworm.  Roughly 8 weeks old and very thin, it was going to be hit and miss as to whether she made it.   The only thing she had going for her was the fact she had already received her rabies vaccination from the local dog charity here.

She was very uncomfortable near men and would wet herself every time either Hassan or Christopher went to give her a cuddle.

We isolated her from the rest of our four-legged family for a few days to tackle some of her skin issues and give her a safe space to support her liver.  After removing so many ticks, it was possible that she may have liver and kidney issues, and we wanted to remove any parasites from her system.  We use Pyrantin for worming, Himalaya Liv 52 liquid for liver support and Himalaya Renulka liquid for kidney support.  Luckily, she was so hungry we could pack her full of food, which was reassuring for her recovery.

Poya Days – Why Do We Celebrate Full Moon in Sri Lanka?

Every month on ‘Poya’ or the day of the full moon, life changes just a little bit in Sri Lanka.  It’s a public holiday and offices are closed.  You cannot buy alcohol or meat from any shop.

Sri Lanka is a dominantly Buddhist country and Buddhists all over the world have a high regard for full moon days. They celebrate this day by practising meditation and by keeping away from worldly life – work, meat and alcohol.  The idea being that if we cleanse our bodies, we have a more powerful spiritual connection with the universe.

In Buddhism it is believed that different phases of Lord Buddha’s life and development have all occurred during various full moons, making the full moon a sacred time. It is said that Lord Buddha was born on a full moon day. His renunciation, his enlightenment and the delivery of his first sermon have all happened during full moons. It is also believed that his soul left his body on a full moon day.
Moon worship is widespread
Interestingly, the worship of the full moon is not isolated to Buddhism. In India it is believed that the moon is the controller of the water.  Considered ‘the drink of the gods’, it circulates through the universe, sustaining all living creatures.

Full Moon worship is also common in ‘Wicca’ or Paganism and each moon is named individually and recognised for it’s different abilities.  For spiritual practitioners across the globe, the full moon is considered a time of heightened activity, opportunity and personal spiritual growth and development.

Healthy Fruits, Veggies & Herbs You’ll Want to Recognise And Eat When You’re In Sri Lanka
When you’re in Sri Lanka you might see some vegetables on the menu that look completely alien to you.  And, if you don’t know what they are, you might not eat them.  So, here’s a run down of 6 which only grow in the tropics and are really good for you.

Everything in moderation – it’s easy to get over excited about the health benefits of some of these veggies and herbs!
1. KanKun (Sometimes written as Kankung) – Asian Water Spinach
You might see this on the menu as an accompaniment to Sri Lankan rice and curry.  If you’re going to eat it cooked, it’s really tasty when sauteed in coconut oil with garlic, chilli, salt and pepper to taste.

If you’re looking to reap the health benefits, this little green wonder is best eaten raw in a salad.

Kan Kun is a rich source of vitamins (particularly A, B and C), iron, protein,  calcium, amino acids and anti-oxidants.

2. Gotu Kola – The Herb of Enlightenment
Gotu Kola, considered one of the most important herbs in botanical medicine, grows naturally in many parts of Asia and is revered in China and India; known as the herb of youth and enlightenment.  Gotu Kola has such a broad range of health benefits and the leaves and stems are commonly used in Traditional Chinese and Ayurvedic medicine.

Gotu Kola is used to treat the following ailments:

Hair loss
Immune dysfunction
Diabetes
Memory problems and depression
Chronic skin conditions (eczema, psoriasis, acne)
Venereal diseases
Anxiety and other nervous disorders

Vegan Coconut Ice Cream – Two Ways

Yesterday, on our mission to create vegan food (which doesn’t feel like you’re eating vegan), we made two types of Coconut ice-cream.  Both made with natural ingredients from our garden and low-volume production local produce, you can feel good as you tuck into a cheeky dessert.

Airfares can be very hard to predict and seem to change all the time based on a number of factors only privy to those in the know.  Last year, if you were flying from Europe to Sri Lanka the cheapest day to fly out was Christmas Day.  This year it’s different.

If you’re thinking about escaping the winter weather and heading to Sri Lanka at Christmas or New Year 2017 you’ll be wondering how to book the cheapest flight and have more money to spend when you get here.
Which Airlines Fly To Sri Lanka?
Several airlines flying here from Europe have good special offers on right now.  Even if you’re planning to fly in the next 6 months, it’s worth signing up for airline newsletters so that you get these offers direct to your inbox.  Register with Sri Lankan Airlines, Emirates, Qatar Airways, Etihad, Gulf Air and Oman Air to get these offers.  Have your credit card ready as most of these offers have very short booking windows from 12 -72 hours.  You might also want to consider flying from a different airport as this can also save you money.

There is a generic  rule that flying on Tuesdays and Wednesdays tends to save you money.  The next best days are Thursday and Saturday.

Coconuts For Everything – Human, Canine and Feline!

Any of you who know us at Fire Dragon Hideaway will wear a wry smile when we start talking about coconuts.  We are a little bit coco-nutty! He he … get it?

We prescribe something of coconut origin for any situation.  Feeling tired?  High fever?  Feeling de-hydrated?  Dodgy stomach?  Allergic reaction? Too much sun?  Urinary Tract Infection? Hangover? Eaten something you shouldn’t? Food too spicy? Eat coconut and drink coconut water and all will be well.  You get the picture. It’s the most incredible all-fixing wonder nut … or is it a fruit?  We’re don’t care, we love it.

Low in calories, naturally sweet, fat and cholesterol free, anti-fungal, anti-viral, more potassium than a bunch of bananas (very useful in the tropics when you’re body craves more salt), and super hydrating – coconut water is nature’s miracle.  Apparently, you can even administer it intravenously.  You’ll be relieved to know we haven’t tried!

To be clear, we recommend it directly from the coconut – as fresh as possible.  There are an increasing number of coconut drinks out there and they might have added sugar and preservatives that may take away from this gorgeous super-food.

Coconut water has supported a number of our canine and feline family members through some dark times.  When Gigi our dog had Filaria, couldn’t walk, and the vet used to look at him with eyes that said “that dog is not going to make it”; a bottle of fresh coconut water every day and every night for 3 months got him through.  Coconut water has supported numerous tiny kittens that we’ve rescued from the street and who were too small or weak to receive any drugs.  In fact, if any one of our animals shows […]

How We Make Our Papaya And Passion Fruit Jam – Fresh From The Garden

Sri Lanka’s Natural Fruity Gifts – Homemade Papaya & Passion Fruit Jam
We’re lucky enough to have some wonderful fruit trees in our garden including two types of passion fruit tree, five types of mango tree, three coconut trees and a whole host of passion fruit trees.

An 11-month drought from September 2016 to August 2017 was a disaster for our fruit trees and we didn’t get good crops last year.  After 1 month of solid rain our garden has come back to life and we’re enjoying beautifully juicy papayas and two types of passion fruit.  Bombarded by fruit from the sky every morning you start to wonder how to make the best of the universal gift before it goes to waste.  So, it’s homemade jam preparation time at Fire Dragon Hideaway!
Recipe for Papaya & Passion Fruit Jam
Our first batch is an equal mix of passion fruit and papaya and we’re sharing our recipe with you.  Make your own at home – it’s so easy!

We make our Papaya and Passion Fruit Jam in 3 stages:

 Make a passion fruit juice syrup.
Make papaya and passion fruit pulpy jam.
Mix together and pop into jars.

Stage One – Passion Fruit Juice Syrup
What you need:

24 Passion fruit
300g Sugar
Water
3 Sri-lankan sized limes

How you make it:

Cut the passion fruits in half and scoop out the pulp and seeds into a saucepan.
Add equal volume of fresh filtered water to the saucepan.
Add the lime juice.
Add 300g sugar and bring to the boil on a low heat stirring regularly.
Leave to simmer for about 30 minutes.

Useful Things To Know For Your Holiday In Sri Lanka

Getting Your Visa Before You Arrive

Sri Lanka now requests that you purchase your Tourist Visa online, at least 24 hours in advance of your flight landing in Colombo Airport.

Can you arrange an airport pick up or an airport drop?

Yes we can!  We’ll ask you to send your flight details to us so that the driver can track your flight to check if it is early or late.  The prices for airport pick up are 2000 LKR (about $14 USD) for a car and 2500 LKR (about $17.50 USD) for a van.  Airport drop prices are 1500 LKR for a car and 2000 LKR for a van.  Please pay the driver directly for your trip.

How far is Fire Dragon Hideaway from the airport?

Fire Dragon Hideaway is 12km from the airport.  We travel the back routes and the journey takes 15-25 minutes depending upon traffic.

Is Fire Dragon Hideaway family friendly and child friendly?

Yes it is.  We have family rooms and a family friendly menu.  Please see here for more details.
